My text ringtone is the first 5 seconds FF4 victory fanfare, normal ringtone is FF6 world theme 'Tina' (Terra).

So far so good, everything is looking like it should, they're not the prettiest things ever, but I wasn't taking my time. Oddly enough I discovered the most effective method for making them was using my bare hands for everything (rather than using a spoon for the meat and a spoon for flattening the dough etc) like (I assume) they would have done hundreds of years ago. Using a spoon or anything to try and smear out the dough just made it stick to everything, including the husk. With bare hands it didn't stick to anything and they rolled up nice and even. Beef, that's why it's taking so long.. Had to cook it for like 3 hours first so that I could shred with a fork, then simmer another hour in the 'sauce'.
I'm steaming them now and I gotta do it in 2 batches :< so I won't be done for another 2 hours.  I much prefer the green chile tamales. Those things are so damn good.

Well I have a bunch of left over masa I'd never use for anything else.. Maybe I'll try green chile next.
EDIT: I know all about cactus <.< I can cook it too (without making it all slimy, wife made me learn how to). Cook it up with some onion and garlic and peppers and spread some re-fried beans on a tortilla and put the cactus on and roll it up.. Damnit.. Now I want that.. Hot damn, that sounds amazing. All kidding aside, I'd bet you could give Emeril a run for his money.
No I couldn't :< maybe I'm just being humble or something but every time someone tells me that I could go and win like Chopped or Hell's Kitchen or like that, actually rival a famous/world-renowned chef I think they're insane. I mean yeah I make good food, food you want to eat, but I don't think I'm anywhere near that level.
I'd get slaughtered on technique alone.. I have none. I'm a very basic cook and have only recently started branching out into more advanced things, like bread. Different techniques open up new ways you can use different ingredients and what not and therefore, they have the advantage automatically because they have a wider selection of dishes they can make based on a set of ingredients, than I can.
