Pies are easy, just don't over mix the dough (It should not come together into a consistant dough or your pie won't be flakey) or roll it too thin. To get it in the shell flour up your rolling pin then roll the dough back on it to easilly lift it and lay it over top of the pie tin then lift the sides so the dough fits to the corners. Gently go around the sides pushing against the dough so it fights nice and snug. Then put whatever is going in it in, some pies you may need to par back, to do that just put a second pie tin inside the pie and bake it a bit.
For the top if needed brush the rim with egg wash (egg mixed with some water or milk), you can either weave it or cut a couple holes in a sheet of dough and lay it over top. The egg wash will help to stick the top to then you can crimp it to make sure it is sealed or go around the edge pressing down with a fork.
I know sagi makes himself a bit of a target with the subligar thing guys but sometimes even a joke can push people too much if it's too often.
