My gf is a vegetarian and I'm not well versed in cooking creatively without meat.
Basically in the 5 months we've been together when I cook it's the same ***all the time
(veggie wraps, garden burgers, stir fry vegetables) but tonight I have Mashed Potatoes picked out
and I'm not sure what would go well with that.
I mean... a delicious steak is all that comes to mind. lol

Does she eat any meat at all? Some vegetarians only avoid red meat and will still eat chicken or fish. In that case, I'd say to have salmon or chicken. If she doesn't eat white meat either, I suppose I'd slice up veggies (red, yellow, and green peppers and onions) into chunks, skewer them onto shishkabobs, and grill them. But that still seems like a pair of side dishes with no main dish. :/
On that note, we're having mashed potatoes tonight too! Yum yum! With some oven-fried chicken or chicken-fried steak or whatever it's called. Can't wait for it to get done, I'm half starved!

I would think load the mashed potatos. IE: Chives/sourcream/1-2 types of cheeses/garlic/onions/maybe asperagus/maybe brocolli(flowers, dont use crappy frozen broccoli thats half stems)/or some other veggy that you like

There's good reason for that.. That's because it is.. No meat = no dinner.

Unfortunately no, she doesn't eat any meat which is a bummer cause yeah like you said,
my sister's a vegetarian but she eats seafood. Salmon would be a great idea if I could.
Also, I told her we're done and she said "No." which I didn't know they could do that?
