For that reason, I think that were I ever to design an RPG, I'd remove exp from random enemies and instead reward it for actual character development. Like, say, you get exp for killing new kinds of enemies, but it stops after like 10, and the bulk of your exp would come from making decisions, completing quests, etc. For items, I would never implement a sort of "collect 20 flowers for my mom" quests, and I think important stuff should get progressively better drop rates as you kill more of things that drop, to a point where you're guaranteed the drop eventually.

I like exp because I can be overpowered if I want or I can do a low level playthrough
8 9 12 (the ones I know of) let you do this since bosses in 9 at least don't give exp, only AP

But it allows for 2 types of play styles fairly easily Couldn't a difficulty slider to the exact same thing without forcing people to grind or avoid exp somehow?

I guess. I like grinding to have skills available and having it set to a higher difficulty so mobs last longer, since I like getting the best gear but still want some challenge.

Numbs my brain? Hmmm. Really any game does if I sit and play it long enough. Every game's got something stupid in it that gets tiring, or some part or point where my eyes glaze over and I forget what I'm actually doing.
