I'm looking to compile as many sources of official lore for FFXI as possible. Of course, much of it will be in Japanese, so any translations would be a massive help:

-Lore Books
-Translations
-Official Articles
-Developer Interviews

I'm toying with the idea of producing a lore book, but I'll need to know the amount of material I'm working with before budgeting for the project.

On one hand, a worthwhile endeavor.

On the other hand, SE will shut down any attempt to publish an actual book.

I've been in touch with FFU before. I recently reached out to them about how they've managed it twice without any issue. You may be exactly right, but they'll have more info on that topic.

Don't listen to Tarage. Do it, open a Kickstarter with a draft.

If it does well, SE will take it over like Shenmue

Sony (not square, if that's what you meant) didn't take over Shenmue, they just helped along with the publisher Deep Silver past the initial kickstarter on things other than dev. The only reason that ball got rolling is because Yu Suzuki had managed to get the IP licensed to his company, and the kickstarter had big names behind it since he was responsible for the originals.

Anyway,
I know you asked about Elmer's translations on BG earlier, but I do hope you take on the task of hiring someone with actual knowledge of JP when it comes to translating all the text that hasn't had any official TL that's been released since. I know SephYuyX has done a lot of work on cataloguing all the published material they can over on bg-wiki. Good luck.

Yesterday I watched a video that were clearly from them but talking about Dragon Quest.

The channel name was Datalog.

I dont follow them so was unsure if Datalog is a new rebranding, a secondary channel or some cease and desist on the FFU

I didn't know about Datalog to be honest, that's interested. Regardless, they run 3 channels iirc. FFU, Datalog (for RPGs) and Kingdom Hearts Union. They are still active on all 3, but most active on FFU.

IIRC, the main guy running the channel mentioned not being allowed to use FF logos, and marketing it as a "fan-made, unofficial FF encyclopedia" otherwise they would run into trouble. But they've published 2 books, so whatever they did, it worked for them.

In fact, rather than being antagonistic to FFU, SE seems to be open to them. Several big names actively working at SE have done interviews with them, attended events they host, etc.
