Well I was going to take a picture for you guys, but I was hungry. Sorry. xD

I love me some baked potatoes! So tonight I baked us up some. I scrubbed my potatoes clean, pierced them a few times on all sides with a fork (I have no intention of cleaning exploded potato out of my oven, k. >.>) I rubbed olive oil over them, then salt, then set them on a foil-lined cookie sheet, tossed them in at 400 degrees F for a little over an hour, yoinked them out, slit them down the middle, fluffed them with a fork, dropped a dollop of butter in each, heated a can of chili, poured chili over each, and topped them both with cheddar cheese. There's just no substitute for a good old fashioned baked potato.

So. Good!

For the first time ever, I'm going to be the hostess this year for Thanksgiving. I've never cooked a turkey and basically have no idea what I'm doing, plus my kitchen table is covered with a 1000-piece puzzle that's half-done and all the pieces are the same shape (except the edges) so it's more of a challenge. Eep! Better get that thrown together!

So anyways. Due to unforeseen medical circumstances, we must go gluten-free. It's not an option, so we can't cheat for a day for Thanksgiving, so I need to make gluten-free bread to get gluten-free bread crumbs to make gluten-free stuffing and so on.

And so tonight I tried my hand at gluten-free apple pie. It's awful. xD As long as you never get a bite of crust, it tastes like apple pie. But that crust is so weird! I'll try a different recipe tomorrow.

Are there any other gluten-free folks here who could toss me any hints? My worst mistake so far was forgetting to put in xanthum gum (those poor cookies never had a chance) and everything else just tastes really strongly of whole wheat, or maybe strongly of brown rice. I'm not really sure how to describe it.

Sorry Liela, you're ***out of luck here.

My mother-in-law can't do gluten, so I know what you're going through. Unfortunately you're just not going to be able to have awesome sweets. Can still do potato stuff, pumpkin stuff, sweet potatoes stuff, and so forth... just basically no flour, which makes baking difficult, because you know white flour is like the base for all sweets/crusts/good stuff.

My suggestion is a crustless pumpkin pie (just google a recipe) for dessert! And here is a fun link with gluten free candy (including chocolate stuffs)

A friend of ours is both no-gluten and no-dairy, so the lil woman has to get really creative with recipes for get-togethers. The big secret seems to be almond flour, but if you want more detailed options, PM me and I'll bug her for actual recipes. At least a few of them, you'd never know there was anything special about it.

I'll see if I can get my grubby paws on some almond flour then too, and see what I can do with it. Thanks, Rooks! :D

If the pie doesn't work, try this. Tastes just like cookie dough but made with nuts/oats, and I know you can get gluten-free oats.

in the future (unless you are planning on taking the puzzle apart and putting it back together) get a piece of posterboard and put a tiny dot of glue on each piece so you can move it around as needed without having to finish it. then if you are so inclined you can put it on the wall when you are done.

Let loose on my diet this past weekend and just cooked up some stuff I've been craving.

Wild mushroom tagliatelle (machine broke 10 seconds into making them, I had to use a rolling pin which took forever lol)

Brownie truffles, gave these a test run to see if they're worth giving as Christmas treats. Left side are dipped in white chocolate and crushed peppermint candy, right side is dark chocolate and coconut. These came out *** amazing.

Neapolitan pizza

With prosciutto and arugula

And an early Christmas gift, ain't she a *** beaut

Mammoth sized beef wellington for Christmas. Didn't get a shot of it when I cut it open, everyone was already waiting with plates in hand to grab a piece. 3lbs of filet mignon in this badboy wrapped in proscittuo, mushroom duxelle, truffle shavings and puff pastry made with a pound of butter lol.

For some reason that looks super red and just like a huge ham roast on my phone.

I use only egg yolk for my egg wash, makes it come out golden brown and superrrrrr crisp.

Diet started today; did really good. Made my own terrible food (I can't cook for ***. Would rather eat McDonalds dollar menu than a T-bone steak if I'm the one who has to cook it)

Counted my calories and all...

then this happened.

My friend made all of these home made from scratch (the pumpkin pie she used a real pumpkin, not canned ***)

If I try to spread this out, I'll cheat on my diet for days. I might just make an eating video tonight and eat it all in one sitting.

Went to Wawa and picked up a base sub for 80 cents (cut it in half will use the other half tomorrow; was planning on using the whole thing but my uncle ate all my damn salmon but 2 filets)

Seasoned up the salmon, warmed up some refried beans, slapped some sriracha on the bread.

Getting some proteins and carbs in
