There are a few Kung Fu and Karate styles that stand among the best in the world and require no weight training or ground fighting. The time spent in developing the style and power behind it is no less than the styles and training regimens you'll see in UFC fighters.
You say "discernible" as though lifting weights will make someone a better fighter--it won't. If you can't relax and allow your body to fight reflexively, you'll always be slower than you can be. Lifting weights teaches your muscles to be tight and rigid, which makes them slower than their potential, no matter how much agility and speed training you do.
Sure, UFC guys are really great fighters and have put in tons of time and effort to get to where they are--not to mention the natural talent a lot of them have. But I get sort of annoyed watching many of them fight, because a lot of it contradicts what I know to be effective.
I think you're the one living in a (musclebound) fantasy.
