I just use plain old russets. Pretty much the potato I use for everything unless something else is specifically needed. Like red potatoes when I'm going to be roasting as they hold up better.
I don't tolerate fries very well. If we go to McDonald's I'll eat them, but anywhere else I'll get something else. Jalapeno bites at Arby's and whatever that other place is, onion rings at Burger King and Dairy Queen, etc. Fries are ok, but they are just kinda bland usually. Even curly fries, all that weird seasoning doesn't un-bland them!
We don't have a Waffle House here, just an Ihop. Hash browns are too filling combined with too little flavor, so they are the last for me to eat, always! Which basically means that I will fill up before I get to them and my husband will filch them when he notices that I'm slowing down. xD
I wish we had a couple places to get amazing small town fries but there's only one place here with really great fries, outside the huge chains
I've been buying these a lot lately every time I'm in the mood to bake something at home and really love em; I'm not sure if it's Canada-exclusive or not though
Basic gist: Actually I can make fries like McDonald's (they stay crispy even after 20-30 minutes) and vinegar is used in the process but not enough to count as a preservative and salt only comes into play afterwards.. So I set out reading people's different recipes and what not and eventually came across something that actually works.

Missed that. (He said last jar and put a hamburger in it, then puts fries in the next, not my fault he lied, that was second to last jar)
I don't have all the answers. I can tell you to be objective he should've found fries that are are of the same size/consistency. I have a bunch of jars we're not using though, I can go fry up some of the fries I made that are based on the McDonald's recipe and the fatter steak fries type fries and see if they break down the same.. I'd rather not, just because it'd be a waste of food and time (what's really accomplished in the end?) but I can just to see what happens.
The fat steak fries are always very different from the McDonald's type and it's bound to play some part in the break down.
I'm not saying they don't use preservatives, I was saying you don't need preservatives to get the fries fast food serves. It can be done naturally. That message was probably lost due to the topic being locked and me having to shorten it up because I didn't feel like trying to type up all that I had..
